Cuban-Stuffed Biscuit Hand Pies
Cuban-Stuffed Biscuit Hand Pies have all the flavors of a Cuban sandwich—stuffed inside a biscuit! These easy hand pies use ham, Swiss cheese, pickles, mustard, and seasoned ground pork for a fun twist on a classic! Perfect for lunches, game day, or an easy weeknight dinner.

Cuban-Stuffed Biscuit Hand Pies take everything you love about a Cuban sandwich and turns it into a stuffed biscuit.
These hand pies start out with biscuit dough that get rolled thin, then stuffed with seasoned ground pork, mustard, pickles, ham, and Swiss cheese.
While authentic Cuban Sandwiches are made with roast pork, I use ground pork in this recipe so they’re easy to make, and still a fun (and tasty) play on a Cubano!
These delicious, hand-held pockets of goodness are great for lunches, dinners, and even snacks for game day!

- Pillsbury Grands Biscuits (not the flaky layers)
- Ground pork
- Yellow mustard
- Pickles – homemade or store-bought
- Ham deli meat
- Swiss cheese
- Spices – garlic powder, onion powder, salt & pepper
What is a Cuban sandwich?
A Cuban sandwich, also known as a Cubano, is a hot sandwich made with Cuban bread that is topped with yellow mustard, pickles, ham, roast pork, and Swiss cheese.
The sandwich is pressed so the exterior of the bread is nice & crispy.
The Cubano dates back to the late 1800’s or early 1900’s, and it’s origins are up for debate.
- Some say it was a street food that was invented in Cuba and got popular in Tampa (Ybor City), Florida when Cubans started moving there to work in cigar factories.
- Others say it was invented in Miami by Cuban immigrants that were seeking refuge.
The Tampa version sometimes has salami on it, due to the Italian influence in the area.
How to make Cuban-Stuffed Biscuits
- First, we make the ground pork filling by cooking the meat with seasonings, then adding the mustard and pickles.
- Then roll out the Pillsbury biscuit dough to 5″.
- Place ham, then cheese, then some of the ground pork filling on one half of the biscuit round.
- Fold over the top and crimp the edges with a fork.
- Bake them according to the instructions on the recipe below.

How to serve Cuban hand pies
These Cubano-stuffed biscuits are great for both snacks and meals!

Cuban-Stuffed Biscuit Hand Pies
Equipment

Ingredients
- 1/2 pound ground pork
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon sea salt
- 1/8 teaspoon black pepper
- 1 tablespoon yellow mustard
- 1/4 cup diced pickles
- 16.3 ounce Pillsbury Grands Biscuits (NOT Pillsbury Flaky Layers)
- 4 extra thin deli ham slices cut in half to = 8 pieces
- 4 Swiss cheese slices cut in half to = 8 pieces
Instructions
Ground Pork Filling
- Add ground pork to a skillet and season it with the garlic powder, onion powder, salt, and pepper. Cook on med-high heat, breaking up the pork into small pieces and stirring often. When no longer pink, add the yellow mustard and pickles to the pork, and stir to combine. Set aside.
Stuffing Biscuits
- Preheat oven to 350°. Place a Pillsbury Grand Biscuit on a silicone baking mat with measurements or another flat surface, and roll out the biscuit dough to 5" in diameter.
- Place ham on the bottom half of the dough, then top with Swiss cheese, and 1 1/2 tablespoons of the pork filling. (there are photos of the steps in post)
- Fold over the top half of the dough with one hand, while securing any filling trying to fall out with your other hand, then crimp the edges closed with a fork. They will be full!
- Repeat this process with all 8 biscuits and place them on a parchment paper lined baking sheet with a little space in between each biscuit. (There will be a little leftover pork)
- Bake them for 15-16 minutes until golden. Enjoy!
Notes
- This recipe has only been tested with Pillsbury Grands Biscuits, not the Pillsbury Flaky Layers Biscuits.
- Store leftover baked hand pies in an air-tight container in the fridge for up to 4 days.
- Hand pies can be reheated in an air fryer at 375° 4-5 minutes or an oven for 8-10 minutes.
