Ingredients needed for this recipe (scroll down to recipe card for complete recipe):

  • Whole dill pickles
  • Cream cheese
  • Shredded cheese – I use cheddar, but feel free to use pepper jack, Monterey jack, or another melty cheese.
  • Cooked bacon
  • Cooked chicken
  • Ranch seasoning

Simply scoop out halved pickled and stuff them with the chicken, bacon, ranch filling, sprinkle a little extra bacon & cheese on top and cook them.

How to Serve Stuffed Pickles

These pickles make the ultimate appetizer that’s perfect for parties, game day, holidays, and tailgating.

They are absolutely perfect as-is, but feel free to serve them with ranch dressing or sprinkle sliced scallions on them as a garnish.

Oven or Air Fryer

I have made these stuffed pickles in both the air fryer and the oven successfully. They are equally delicious, but this is what I found in recipe testing:

  • The pickles that baked in the oven seemed to have a juicier pickle.
  • The pickles that cooked in the air fryer had a crispier cheese and bacon topping.

💡Tips & Tricks

  • Pickles: Pickle sizes vary. My pickles ranged from 3 1/2″-5″ long. The stuffing for this recipe makes enough to stuff 6-8 pickle halves in that size range.
  • Cheese: Feel free to substitute the cheddar with your favorite cheese. Pepper jack, Monterey Jack, and Colby Jack are great too.
  • Bacon: Feel free to cook and crumble bacon, but I love using pre-cooked bacon! I pop it in the microwave for 30-45 seconds to get crispy!

Equipment

Ingredients
  

  • 3-4 whole dill pickles approximately 4" inches long
  • 4 ounces cream cheese room temperature
  • 1/2 cup finely shredded or chopped cooked chicken/rotisserie chicken (4 ounces)
  • 1 tablespoon ranch seasoning powder
  • 1/2 cup chopped bacon divided
  • 1/2 cup shredded cheddar divided

Instructions
 

  • Cut each pickle in half lengthwise. Use a knife to cut around the insides of the pickle, being careful not to cut through the bottom, then use a spoon to scoop out the seeds and flesh, creating a cavity for stuffing. Wrap the pickles with paper towels to absorb the juices.
  • In a mixing bowl combine the cream cheese, chicken, ranch seasoning, half of the bacon, and half of the shredded cheese with a fork. (we'll use the other half of the bacon and cheese for the top of the stuffed pickles). Mix well until the ingredients are fully combined.
  • Spoon the cream cheese filling into each hollowed pickle half, then sprinkle on the remaining bacon and shredded cheese, pressing it down so it sticks.

Air Fryer Instructions

  • If using, place liner in the air fryer basket. Place the stuffed pickles in the air fryer basket in a single layer and cook for 8-10 minutes at 375°.

Oven Instructions

  • Preheat oven to 400°. Place the stuffed pickles on a parchment paper-lined baking sheet and bake for 10-12 minutes.

Notes

  • You can make these stuffed pickles ahead of time by following steps 1-3 in the directions, then keep them in an air-tight container in the fridge for up to 24 hours.  Cook according to instructions when ready.
  • I love using pre-cooked bacon from the grocery store.  I cook it in the microwave for 30-45 seconds to crisp it up.
  • The pickles I used ranged from 3.5″-5″ long.  The filling will stuff approximately 4 pickles, making 8 stuffed pickles.
  • Store leftover stuffed pickles in an air-tight container in the refrigerator and use within 2 days.
  • These are perfect appetizers as-is, but feel free to garnish with scallions or serve with ranch dressing.
