Slow Cooker Pimento Cheese Chicken Sandwiches, all the flavors of pimento cheese in a delicious chicken sandwich that's perfect for parties & easy dinners!
Place chicken in slow cooker and season with the spices (garlic powder, onion powder, sea salt, cayenne pepper, black pepper). Add the Worcestershire sauce, pimentos, and cream cheese. Cook on low for 4 hours or until the chicken is 165℉.
When the chicken is done, there will be liquid in the slow cooker. I leave it in there because the chicken will absorb it. With 2 forks, shred the chicken right in the slow cooker and give everything a stir so the cream cheese is fully combined. Add the cheddar cheese and stir to combine. It should melt quickly.
Slather mayo on your bread, add pimento cheese chicken filling and your favorite toppings. Enjoy!
A tiny bit of acid from either pickle brine, hot sauce, or pickled red onions on the sandwich adds a great pop of flavor to this rich chicken.
Notes
Boneless, skinless thighs can also be used, but they cook quicker, so you'll want to check them sooner.
There is no need to add water or broth. The chicken will release liquid as it cooks.
Depending on how much chicken you use and how big your buns are, you should get between 8-12 sandwiches.
