They have the creamy flavors of pimento cheese, but transformed into a family-friendly chicken sandwich that is great for busy weeknight dinners or entertaining company.
Since mayo doesn’t do well in a slow cooker, we use cream cheese to give this recipe the necessary creaminess. It also has cheddar, pimentos, Worcestershire, and spices.
To get mayo, a classic pimento cheese ingredient, incorporated into the sandwich, we slather it on the bun!

Ingredients needed (scroll down to recipe card for complete recipe):
- Chicken breasts – boneless, skinless (thighs can be used)
- Jarred pimientos
- Cream cheese
- Shredded cheddar
- Worcestershire sauce
- Seasonings – garlic powder, onion powder, cayenne pepper, salt & pepper
- Sandwich ingredients – mayo, hamburger buns, red onion (fresh or pickled)

Bread options: hamburger buns, ciabatta bread, Texas toast, brioche buns, or Hawaiian rolls. Although white bread is traditional, it may be too flimsy.

💡Tips & Tricks
- Try the chicken filling warm or cold!
- Mayo is not added to the slow cooker because it separates and becomes greasy. It’s perfect spread on the bun!

Slow Cooker Pimento Cheese Chicken Sandwiches
Equipment
- 5 quart slow cooker or larger
Ingredients
Pimento Cheese Chicken
- 2 1/2 pounds boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sea salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 2 teaspoons Worcestershire sauce
- 1 (4 ounce) jar diced pimentos drained
- 8 ounces full fat cream cheese
- 1 (8 ounce) bag of shredded cheddar cheese (or shred your own)
- hot sauce or pickle juice optional
Sandwiches
- Bread: hamburger buns, Texas toast, Hawaiian rolls, slider buns, ciabatta rolls
- mayo to taste
- pickled red onions
- Optional: sliced tomato, bacon, lettuce, pickles
Instructions
- Place chicken in slow cooker and season with the spices (garlic powder, onion powder, sea salt, cayenne pepper, black pepper). Add the Worcestershire sauce, pimentos, and cream cheese. Cook on low for 4 hours or until the chicken is 165℉.
- When the chicken is done, there will be liquid in the slow cooker. I leave it in there because the chicken will absorb it. With 2 forks, shred the chicken right in the slow cooker and give everything a stir so the cream cheese is fully combined. Add the cheddar cheese and stir to combine. It should melt quickly.
- Slather mayo on your bread, add pimento cheese chicken filling and your favorite toppings. Enjoy!
Notes
- Boneless, skinless thighs can also be used, but they cook quicker, so you’ll want to check them sooner.
- There is no need to add water or broth. The chicken will release liquid as it cooks.
- Depending on how much chicken you use and how big your buns are, you should get between 8-12 sandwiches.
- Store leftover chicken in an air-tight container in the fridge for up to 4 days.
