Jalapeno Lime Shrimp

Succulent Jalapeno Lime Shrimp, marinated in a zesty, fresh jalapeno and lime marinade, are perfect for an easy weeknight meal!  Just sauté the shrimp and you’re ready for tacos or quesadillas, or go tapas-style with a loaf of crusty bread!

Equipment

  • non-reactive mixing bowl

Ingredients
  

  • 1 pound peeled and deveined jumbo or large shrimp
  • 1 tablespoon minced fresh jalapeno approximately 1 average jalapeno
  • 1 garlic clove minced
  • 1/4 teaspoon cumin
  • 2 tablespoons olive oil or avocado oil divided
  • 2 limes the juice of
  • salt & pepper to taste

Instructions
 

  • Marinate shrimp in a glass or plastic bowl with the jalapeno, garlic, cumin, lime juice, salt & pepper, and one of the two tablespoons of oil. Stir to combine and set aside for 15-20 minutes.
  • After the shrimp have marinated for 15-2020 minutes, heat the other tablespoon of oil in a large skillet. Dump the bowl of shrimp in the skillet, making sure each shrimp is laying flat. Cook for 2-3 minutes, then with tongs, turn each shrimp over and cook another 2-3 minutes. Shrimp are done when pink and no more gray is present.
  • Use shrimp in tacos, quesadillas, add to some pasta, or serve with a crusty loaf of bread. Enjoy!

Notes

  • Leftover shrimp can kept in an air-tight container in the refrigerator and used within 3-4 days.
