Succulent Jalapeno Lime Shrimp, marinated in a zesty, fresh jalapeno and lime marinade, are perfect for an easy weeknight meal! Just sauté the shrimp and you’re ready for tacos or quesadillas, or go tapas-style with a loaf of crusty bread!
1tablespoonminced fresh jalapenoapproximately 1 average jalapeno
1garlic cloveminced
1/4teaspooncumin
2limesthe juice of
2tablespoonsolive oil or avocado oildivided
salt & pepper to taste
Instructions
Marinate shrimp in a glass or plastic bowl with the jalapeno, garlic, cumin, lime juice, one of the two tablespoons of oil, and salt & pepper. Stir to combine and set aside for 15-20 minutes.
After the shrimp have marinated for 15-20 minutes, heat the other tablespoon of oil in a large skillet. Using tongs, add the shrimp to the skillet, making sure each shrimp is laying flat. Cook for 2-3 minutes, then turn each shrimp over and cook another 2-3 minutes. Shrimp are done when pink and no more gray is present.
Use shrimp in tacos, quesadillas, add to pasta or burrito bowls, or serve with a crusty loaf of bread. To make quesadillas, melt butter in a skillet and place a tortilla stuffed with cheese and chopped Jalapeno Lime Shrimp. Cook each side until the tortilla is golden & crispy and the cheese has melted. Enjoy!

Leftover shrimp can kept in an air-tight container in the refrigerator and used within 3-4 days.
