When I get a pound of some nice shrimp on sale, one of my favorite things to make is Jalapeno Lime Shrimp!

The jalapeno, lime, and garlic infused in the shrimp is absolutely perfect for your favorite Mexican fare like tacos and quesadillas, however, they’re also great over rice.

The shrimp could also be turned into grilled shrimp kabobs, or bring the pan of sautéed shrimp to the dinner table with some crusty bread for a more rustic, family-style dinner.

Ingredients needed for this recipe (scroll down to recipe card for complete recipe):

  • Shrimp
  • Limes
  • Jalapenos
  • Garlic
  • Olive oil/avocado oil
  • Cumin, salt, pepper

How to make Jalapeno Lime Shrimp

  1. Simply marinate your shrimp with fresh lime juice, jalapeno, garlic, cumin, and either avocado oil or olive oil.  Let it marinate for about 15 minutes, then it’s good to go!
  2. Add shrimp to a skillet and sauté for a minute or two, then turn each shrimp over and cook another 2 minutes, or until they are no longer gray and have curled up.

How to serve Jalapeno Lime Shrimp:

  • Perfect for shrimp tacos with salsa, cabbage slaw, avocado, and some cotija cheese.
  • Shrimp quesadillas (pictured at top of post)
  • Serve over herbed butter garlic rice
  • Add it to burritos with Mexican rice and pico de gallo
  • Go rustic and enjoy the shrimp with a loaf of crusty French bread
  • Burrito bowls – put a layer of Mexican rice on the bottom of a bowl, top it with the shrimp, guacamole, some sour cream, a little hot sauce or salsa, and garnish with fresh cilantro.  Yum!

NOTES:

  • Make sure you use a non-reactive bowl (plastic or glass) when marinating.  Metal bowls have a negative reaction with acids in marinades.
  • Don’t marinate the shrimp for too long or the lime juice will start to “cook” the shrimp.  Then you’ll have shrimp ceviche ;)
