Slow Cooker Cajun Sausage, Green Beans, and Potatoes is one of those magical recipes that my whole family loves!
We all love spicy andouille sausage, and the vegetables are cooked in a mouthwatering combination of butter, dried thyme, garlic powder, smoked paprika, and cayenne pepper. So good!
The butter and juices from the sausage combined with the zesty spices create a mouthwatering sauce that coats everything.
The best part? It’s incredibly easy to make! Just toss everything in the slow cooker and let it do its thing. Who doesn’t love an easy, one-pot meal!

Ingredients needed (scroll down to recipe card for complete recipe):
- Andouille sausage (or other smoked sausage)
- Potatoes – I used baby red potatoes, but any will work
- Green beans – fresh will have the best texture
- Butter
- Seasonings – dried thyme, smoked paprika, garlic powder, cayenne, salt, pepper
In this south, this dish is known as swamp potatoes. It often includes similar ingredients and is known for being a delicious and easy dinner to throw together as a “dump & go” meal.
How to make Slow Cooker Cajun Sausage, Green Beans & Potatoes
- First add the potatoes and green beans to the slow cooker.
- Then add the sausage, butter, and spices. That’s it! The juices from the sausage will combine with the butter and seasonings to add incredible flavor to the veggies!
📍The full recipe with exact ingredient amounts and instructions is on the recipe card at the bottom of the post.
I like to cut the fresh green beans in half and quarter the baby red potatoes so everything is bite size.
The juices from the sausage and the melted butter will combine with the spices to create a glorious sauce that is wonderful spooned over the finished dish!
Cajun Egg Salad is another recipe made with those flavorful spices!
How to serve this meal?
The Cajun butter is so delicious! Make sure you spoon some from the bottom of the slow cooker over your food as you serve it.
We like to serve this with a roll, baguette, or focaccia bread to sop up the delicious Cajun butter.
If you like spicy food, a Louisiana-style hot sauce is a great addition when serving.
Variations & Substitutions
- Green beans – For the best texture, I recommend fresh green beans. Frozen green beans could work, but I wouldn’t use canned green beans.
- Potatoes – I used quartered baby red potatoes in this recipe, but you could use Russets or Yukon Gold. Note that Russets are starchier, so they won’t hold their shape as well.
- Sausage – Andouille is traditional for Cajun recipes, but you could also use smoked sausage or kielbasa.
- Less spicy – To make this recipe less spicy, replace the andouille with a more mild smoked sausage and omit the cayenne pepper.
- Lighter – To make this recipe lighter, use a smoked turkey or chicken sausage. You could also reduce the amount of butter, but it does add a lot of flavor to the dish.
- Add more veggies – If desired, feel free to add some fresh onion, carrots, or celery.

Slow Cooker Cajun Sausage, Green Beans, and Potatoes
Equipment
- 6-quart slow cooker or larger
Ingredients
- 1 pound baby potatoes, quartered
- 12 ounces fresh green beans cut in half
- 1 pound Andouille sausage cut into bite-size chunks
- 1/2 cup unsalted butter (1 stick)
- 3/4 teaspoon smoked paprika
- 1/2 teaspoon dried thyme rolled between your hands
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper omit if you don't like spicy
- 1/2 teaspoon sea salt
- black pepper to taste
Instructions
- Add the potatoes and green beans to your slow cooker, then top them with the sausage and butter. (This order ensures the butter & sausage juices drip down over the veggies)
- Sprinkle all of the spices over everything in the slow cooker and cook on low for 4 hours. Give everything a stir to make sure the delicious Cajun butter coats everything and serve warm. I like to drizzle some of the sauce at the bottom of the slow cooker over each plate of food when served. Enjoy!

Notes
- You can also use full-size potatoes, but make sure you cut them into bite-size pieces. Russets are starchier, so they won’t hold their shape as well as Yukon Gold or red potatoes.
- Feel free to use smoked sausage, kielbasa, or turkey/chicken sausage if want a more mild sausage or you can’t find andouille.
- No need to brown the sausage, just cut it and toss it in!
- Once cooled, store leftovers in an air-tight container in the fridge for up to 4 days.
- This can be frozen, however, the texture of the potatoes may change when reheated. Best within 2-3 months.

This looks so good! Would canned green beans work or do they have to be fresh?
Canned green beans are already cooked, so if you use them, they wouldn’t need to be cooked with the rest of the recipe or they’ll turn to mush. Fresh are best in my opinion.
Gonna make this tomorrow. All I have is frozen green beans. Should I thaw them first?
I’ve only tested this recipe with fresh green beans. Frozen should be fine, just be aware the texture of the green beans may turn out different. Hopefully they won’t release much water.
Is it ok to melt the butter first?
I’m sure that is fine. The butter combines with the spices to season everything, so if you use melted butter, I would pour it over everything in the slow cooker as the last ingredient.
Delicious! Super easy, hearty and flavorful dinner the whole family enjoyed. Definitely adding it to the rotation.
So glad everyone enjoyed it! This is a big hit with my family too!
What would it be could with corn bread
Super simple and delicious, and fresh green beans to boot! I make this often, and have shared with many.
Simple and delicious. The entire family loved it, even the picky one. Bonus points for the fact it was a hit as a leftover as well
I am so glad to hear that! Thank you SO MUCH for your review!
