Slow Cooker Lemon Garlic Chicken & Veggies

Slow Cooker Lemon Garlic Chicken & Veggies, a complete chicken dinner made with chicken and fresh veggies that are slow cooked with butter, garlic, lemon juice, and herbs.  It’s a fabulous one-pot meal your whole family will love!

Who loves the comfort food of baked chicken with all the sides for dinner?  Me too!  That’s why I created Slow Cooker Lemon Garlic Chicken & Veggies

It’s a complete chicken dinner featuring lemony chicken and fork-tender veggies all bathing in a flavorful garlic-lemon-butter bath.  Yum!

Not only is this garlicky chicken dinner delicious, I love that the entire meal, including sides, is made in the slow cooker! 

That means no extra dishes to wash AND I save time not having to make side dishes! 

Slow Cooker Chunky Chicken Barley Stew is another great one-pot chicken dinner!

Ingredients needed for this recipe (scroll down to recipe card for complete recipe):

  • Chicken breasts – thighs could be used if desired
  • Potatoes – I like red potatoes because they’re less starchy and stay together
  • Fresh green beans
  • Garlic
  • Butter
  • Lemon juice
  • Seasonings – dried thyme, salt, pepper

How to make Lemon Garlic Chicken & Veggies

Making this recipe is super easy as you just throw everything in the slow cooker!

  1. Place seasoned chicken breasts on the bottom of the slow cooker
  2. Top the chicken with potatoes, green beans, garlic, butter, seasonings and lemon juice.  
  3. Cook according to instructions on recipe card below.

How to serve this chicken and veggies

You can serve this right from the slow cooker, but I like to put everything on a large platter and serve family style for people to help themselves. 

Be sure to pour all the amazing liquid over everything and serve with a spoon so everyone can get more sauce!

This is a great all-in-one meal by itself, but it would be great served with Slow Cooker Herbed Focaccia Bread or a baguette.

How to store leftovers

Store leftover chicken & veggies in an air-tight container in the refrigerator and use within 3-4 days.

Equipment

  • 5 quart slow cooker or larger

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 4 red potatoes quartered
  • 1 pound fresh green beans trimmed
  • 6 garlic cloves minced
  • 1 stick of butter cut into pieces
  • 2 lemons the juice of
  • 1/2 teaspoon dried thyme
  • salt & pepper to taste

Instructions
 

  • Place the chicken breasts in the bottom of a slow cooker and season them with salt, pepper, and a little dried thyme, then add the potatoes, followed by the green beans, then the garlic, butter and lemon juice. Cook on low for 4-6 hours. It's done when the chicken has reached 165° and the vegetables are tender.

    Such a good dinner. My whole family loved it and ate every bit of it. Was so easy to make between my school bus runs to be ready when I got home.

  2. Can this be made with other cuts of chicken eg thigh cutlets as I find the breasts tend to dry out. Thank you
