Slow Cooker Asparagus Leek Soup –  This light, flavorful asparagus soup is made in a slow cooker with leeks and other fresh vegetables.  Purée everything to your desired smoothness for a cozy bowl of warm goodness!

I love asparagus!  My family and I like it roasted it in the oven, adding it to salads, and enjoy it in this slow cooker asparagus leek soup recipe!

The earthy, grassy notes of asparagus combined with the slight oniony flavor of leeks is a wonderful pairing. 

The heavy cream adds a nice richness to the soup, tying it all together.

Ingredients needed for this recipe (scroll down to recipe card for complete recipe):

  • Asparagus
  • Leeks
  • Celery
  • Onion
  • Garlic
  • Broth
  • Seasonings – dried thyme, salt, pepper, bay leaf
  • Heavy cream  – coconut milk is a vegan option
  • Optional garnish – parmesan cheese, crushed red pepper flakes, crumbled bacon

How to make Slow Cooker Asparagus Leek Soup

  1. Add everything except for the heavy cream to the slow cooker.  
  2. When it’s done cooking (cooking times on recipe card below), use immersion blender to purée soup to your desired texture.
  3. Add heavy cream (or coconut milk to make it vegan) to the soup and taste for needed salt and extra cream.
  4. Drizzle a little cream on top of soup for a pretty presentation and top with optional garnishes listed below.

How to serve Asparagus Leek Soup?

We like to serve this asparagus soup as a main course with either a side salad or a loaf of crusty bread.

There are many delicious garnishes and finishing touches for this soup.  Some of our favorites are:

  • Parmesan cheese
  • Crumbled bacon
  • Drizzle of heavy cream
  • Crushed red pepper flakes

How long is asparagus leek soup good for?

Once cooled, keep leftovers in an air-tight container in the refrigerator for up to 3-4 days.

Due to the way frozen dairy reheats, I recommend freezing this soup without the heavy cream and adding it later when reheating.  Freeze for up to 3 months.

Ingredients
  

  • 2 lbs. asparagus, chopped
  • 2 celery stalks, sliced
  • 2 leeks, sliced soaked & rinsed well
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1/2 tsp. dried thyme
  • 1/2 tsp. sea salt
  • black pepper, to taste
  • 4 cups vegetable broth
  • 1/4 cup heavy cream use coconut milk to make it vegan
  • Optional garnishes: parmesan cheese, crushed red pepper flakes, crumbled bacon

Instructions
 

  • (Make sure you soak and rinse your leeks really well, or you will be crunching on sand and dirt in your soup)
    Add everything except the heavy cream to the slow cooker (asparagus, celery, leeks, onion, garlic, seasonings, and broth). Cook on high for 4 hours or low 6-7 hours.
  • Remove bay leaf from slow cooker. Use an immersion blender to purée the soup to your desired texture, then add 1/4 cup of heavy cream to the soup. Stir the soup, then taste it to determine if it needs more salt and if desired, more cream.
  • For a pretty presentation, ladle soup into bowls, then pour heavy cream into a tablespoon and slowly drizzle it around on top of each bowl of soup. Optional garnishes: parmesan cheese, crushed red pepper flakes, crumbled bacon. Enjoy!
