  • Ground beef
  • Marinara sauce
  • Beef broth
  • Noodles – baby mafalda (mafaldini) or campanelle work well
  • Seasonings – dried oregano, dried basil, garlic powder, onion powder, salt & pepper
  • Ricotta
  • Shredded mozzarella
  • Grated Parmesan
  • Olive oil – optional (not needed with less lean meat)
  • Fresh basil – optional garnish

💡Tips & Tricks

  • Pasta: I have tested this recipe with broken lasagna noodles and they don’t work well – they’re difficult to break properly and they take longer to cook. Mafaldini and campanelle, which are flat (non-tubular), wavy noodles work best.
  • Sauce: Jarred sauce is a great time-saver for this 30-minute recipe. I use my favorite jars of marinara or arrabbiata sauce.

Ingredients
  

  • 1 tablespoon olive oil (optional) to aid in cooking lean ground beef
  • 1 pound ground beef I use 93% lean
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 8 ounces mafaldini or campanelle pasta (approx. 2 1/2-3 cups)
  • 32 ounces marinara
  • 12 ounces beef broth
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 cup ricotta cheese see notes below
  • 8 ounces shredded mozzarella see notes below
  • 1/4 cup grated parmesan cheese
  • freshly torn basil optional garnish

Instructions
 

  • If using lean ground beef, heat olive oil in a deep skillet over medium-high meat. Add ground beef, season with garlic powder, onion powder, salt and pepper, and crumble the meat. Cook 5-8 minutes, or until it has cooked through.
  • Add the pasta, marinara, broth, dried oregano, and dried basil. Stir to combine and bring to a boil, making sure the pasta is pushed down under the liquid. Once boiling, reduce heat to medium-low, cover, and simmer until pasta is tender, about 15-18 minutes.
  • Spoon ricotta in small dollops across the top of the skillet, then sprinkle mozzarella and lastly, the Parmesan. *See notes below regarding ricotta. Pop the skillet under the broiler for a couple minutes to get the cheese golden and bubbly. If desired, garnish with freshly torn basil and enjoy!

Notes

  • If you don’t mind dirtying another dish, I like to combine the ricotta, some garlic powder, some dried oregano, and extra Parmesan cheese in a bowl, then drop spoons of it on top.  It makes the ricotta layer even more flavorful.
  • I use full-fat ricotta cheese, as reduced-fat can be grainy.
  • Whole milk mozzarella will melt better than part-skim mozzarella.
  • I’ve made this with broken lasagna noodles and I don’t think work well for this recipe.  They take longer to cook and don’t break into consistent size pieces, so I prefer mafaldini or campanelle – they’re wavy and perfect for this saucy recipe.
