Gochujang Ground Turkey, Rice & Green Bean Skillet is a delicious and super easy one-pan recipe that’s perfect for weeknights!

It’s made with ground turkey, instant brown rice, and vegetables in a savory sauce made with gochujang.

Gochujang is a Korean paste made from fermented soy beans, red chili peppers, and glutinous rice. It’s spicy, salty, sweet, and savory.

Combined with soy sauce, rice vinegar, honey, and sesame oil, the gochujang helps create an incredibly flavorful sauce for the skillet.

This recipe was created to be a healthy, one-pan meal. Hence, I used brown rice instead of white, and ground turkey instead of ground beef or pork.

How to serve

Gochujang Ground Turkey, Rice & Green Bean Skillet is an excellent all-in-one meal, however, here are some delicious sides that complement it.

Sriracha and/or toasted sesame seeds are great garnishes!

💡Tips & Tricks

  • Rice: I use pre-cooked rice for this recipe because that’s how we’re able to make it in one pan. It’s a great short cut! You could cook rice separately if desired.
  • Green Beans: Frozen green beans may get mushy and release water into the pan, so I recommend fresh green beans.

Equipment

  • 12" skillet
  • small mixing bowl

Ingredients

Skillet ingredients

  • 1 tablespoon avocado oil or olive oil
  • 1 pound ground turkey I use 93%
  • 12 ounces trimmed fresh green beans cut into 1.5" pieces
  • 1 small yellow onion, diced (about 1 cup)
  • 3 garlic cloves minced
  • 1 tablespoon ginger paste or 1" fresh ginger minced
  • 1/2 cup julienned carrots
  • 1 (8.8 ounce) Ben's Original Ready Rice – Whole Grain Brown
  • salt & pepper to taste
  • sliced scallions to taste
  • toasted sesame seeds to taste
  • sriracha optional

Gochujang Sauce ingredients

  • 3 tablespoons gochujang
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon toasted sesame oil
  • 1/2 cup water

Instructions

  • Add the oil and ground turkey to skillet and cook on med-high until cooked through (about 7-8 minutes), then add green beans and cook for another 7-8 minutes.
  • While the green beans and turkey cook, make the Gochujang Sauce. To a small mixing bowl, add the gochujang, soy sauce, rice vinegar, honey, sesame oil, and water. Stir until combined, then set it aside.
  • Once the green beans have cooked for about 7-8 minutes, add the onion, garlic, and ginger and cook for 5-6 minutes. The onions should be softened. Add the carrot, rice, and Gochujang Sauce. Stir to combine. Cook until heated through (about 5 minutes). Green beans should be tender-crisp. Continue cooking if you want them softer. Taste for needed salt & pepper and add it to taste.
  • Garnish the skillet with sliced scallions and toasted sesame seeds. Excellent served with sriracha! Enjoy!

Notes

  • Ground beef, ground chicken, or ground pork can be substituted for ground turkey.
  • I get bags of julienned carrots at the grocery store.  Super convenient!
  • Ben’s Ready Rice is used to make this a one-pan meal.  If desired, you could make your own rice or use leftover rice.
  • Store leftovers in an air-tight container in the fridge for up to 4 days.  It can be frozen in freezer-safe packaging.  Use within 3 months for the best quality.
