Mediterranean Hummus Veggie Wraps

Mediterranean Hummus Veggie Wraps make the perfect light, veggie-filled lunch that’s all folded into a delectable wrap or tortilla!  Naturally vegetarian, these wraps can easily be made vegan.

Mediterranean Hummus Veggie Wraps are so satisfying because they’re fresh, healthy, and check all the texture boxes with crunchy veggies and creamy hummus. 

I don’t get tired of them because I can change up the toppings whenever I want!

They start with a wrap with hummus spread on it, a leafy green like spinach or arugula, and an assortment of fresh vegetables, a pickled vegetables.

Sometimes I add feta cheese or tzatziki sauce, but those are optional.

These wraps are a great vegetarian meal all year long, but especially in the summertime!

Ingredient needed to make this recipe (scroll down to recipe card for complete recipe):

  • Wrap, tortilla, or lavash bread
  • Hummus – homemade or store-bought
  • Leafy green – romaine, arugula, spinach
  • Fresh vegetables – cucumber, bell pepper, red onion
  • Pickled vegetables – pickled turnips, hot banana peppers
  • Feta cheese (optional)
  • Tzatziki (optional)

The vehicle for the wrap could be a spinach wrap like I used, or it could be a burrito-sized flour tortilla, lavash bread, or any kind of thin, foldable flatbread.

Hummus.  It’s not only the binder for the wrap, but the chickpeas in hummus are a healthy source of protein and fiber.

One of my favorites is this Spicy Chipotle Hummus, but you could use store-bought to save time.

Toppings ideas for these wraps:

To leave it vegan, stop at the veggies, but I like to add feta cheese or tzatziki to my wraps for a creamy element.  Mediterranean Hummus Veggie Wrap with hummus, spinach, cucumber, red onion, pickled middle eastern turnips, and feta cheese, flat, before it's folded into a wrap.

Ingredients
  

  • 1 wrap/tortilla/lavash/flatbread
  • hummus to taste
  • greens spinach, arugula, or romaine
  • sliced veggies red onion, cucumber, tomato, pickled veggies, olives, sweet mini peppers, roasted beets, red cabbage, etc.
  • pickled veggies hot banana peppers, pickled turnips, pickled onion
  • feta cheese optional
  • tzatziki optional

Instructions
 

  • I like to pop my wrap in the microwave for about 10-15 seconds to soften it and make it more pliable so it doesn't tear when folding it into a wrap.
  • Spread hummus on wrap, top with greens, veggies, pickles, and feta cheese/tzatziki if using. Fold into a wrap and enjoy!
