Crispy Za’atar Roasted Potatoes
Seasoned with garlic and Middle Eastern za’atar, Crispy Za’atar Roasted Potatoes are the perfect side dish to spice up your meal. These delicious potatoes are crispy on the outside and soft and tender on the inside!

The spices in Crispy Za’atar Roasted Potatoes are already delicious, but adding the spices to potatoes, then roasting them in the oven? Even more amazing!
I first bought za’atar to make Middle Eastern Bowls with Spiced Beef. They’re amazing. They have hummus, pickled turnips, salad shirazi, rice & ground beef seasoned with za’atar.
These oven-roasted potatoes have a slightly nutty flavor from the sesame seeds, and an awesome herbaceous flavor from the dried herbs, that combined with garlic, just make the BEST potatoes!
What is za’atar?
Za’atar is a Middle Eastern spice blend made with sumac (a bright, lemony spice), sesame seeds, and dried herbs (thyme, hyssop, oregano, or marjoram are common herbs in za’atar).
Each brand of za’atar seems to vary slightly – sometimes they contain only one herb, and sometimes they have three or four!

Ingredients need (scroll down to recipe card for complete recipe):
- Russet potatoes
- Olive Oil
- Za’atar seasoning
- Salt & pepper
- Garlic powder
How to make Crispy Za’atar Roasted Potatoes
- Simply cut up your potatoes and toss them in a bowl with olive oil and the rest of the seasonings.
- Roast them in the oven on a greased baking sheet for 20 minutes, toss them around, and then roast them for another 15 minutes. They’ll be slightly golden and perfectly crispy on the outside, while nice and tender inside. (full recipe below)

These crispy potatoes make a great treat at breakfast instead of traditional home fries!

How to store roasted potatoes
Keep leftover potatoes in an air-tight container in the fridge for up to 3-4 days.

Crispy Za’atar Roasted Potatoes
Equipment
- Mixing bowl
- baking sheet
Ingredients
- 4 russet potatoes cut in half length wise, then in half again, then sliced across into 1-inch pieces
- 1/4 cup olive oil
- 2 tablespoons za’atar
- 3/4 teaspoon sea salt
- 1/2 teaspoon garlic powder
- black pepper to taste
Instructions
- Preheat oven to 400℉. Add the potatoes to a medium/large bowl. Pour the olive oil over the potatoes, making sure to coat all the pieces. Sprinkle the seasonings over the potatoes, while stirring them around to make sure seasonings are distributed evenly.
- Add the potatoes to a greased baking sheet, moving them around so they are laying flat and bake for 20 minutes. Take the potatoes out of the oven, and stir them around and try to turn them over so the other side of the potato can now touch the bottom of the pan, then bake for 15 more minutes. Serve immediately. Enjoy!
