Slow Cooker Cajun Sausage, Green Beans, and Potatoes

Slow Cooker Cajun Sausage, Green Beans, and Potatoes combines smoky, spicy sausage with tender green beans and potatoes, all cooked with creamy butter and Cajun spices.  It’s a super flavorful, easy-to-make, one-pot meal that’s both hearty and effortless.

Slow Cooker Cajun Sausage, Green Beans, and Potatoes is one of those magical recipes that my whole family loves! 

We all love spicy andouille sausage, and the vegetables are cooked in a mouthwatering combination of butter, dried thyme, garlic powder, smoked paprika, and cayenne pepper.  So good!

The butter and juices from the sausage combined with the zesty spices create a mouthwatering sauce that coats everything.

The best part?  It’s incredibly easy to make!  Just toss everything in the slow cooker and let it do its thing.  Who doesn’t love an easy, one-pot meal!

Ingredients needed for this recipe (scroll down to recipe card for complete recipe):

  • Andouille sausage (or other smoked sausage)
  • Potatoes – I used baby red potatoes, but any will work
  • Green beans
  • Butter
  • Seasonings – dried thyme, smoked paprika, garlic powder, cayenne, salt, pepper

How to make Slow Cooker Cajun Sausage, Green Beans & Potatoes 

  1. First add the potatoes and green beans to the slow cooker.
  2. Then add the sausage, butter, and spices.  That’s it!

I like to cut the fresh green beans in half and quarter the baby red potatoes so everything is bite size.

Sausage and butter have been added to the potatoes and green beans in the slow cooker. The second step in the process.

The juices from the sausage and the melted butter will combine with the spices to create a glorious sauce that is wonderful spooned over the finished dish!

How to serve this meal?

The Cajun butter is so delicious!  Make sure you spoon some from the bottom of the slow cooker over your food as you serve it.

We like to serve this slow cooker meal with a roll or crusty bread to sop up the delicious Cajun butter.

If you like spicy food, a Louisiana-style hot sauce is a great addition when serving.

Variations & Substitutions

  • Green beans – For the best texture, I recommend fresh green beans.  Frozen green beans could work, but they will add water to the dish and may not have a great texture.  I wouldn’t use canned green beans.
  • Potatoes – I used quartered baby red potatoes in this recipe, but you could use Russets or Yukon Gold.  Note that Russets are starchier, so they won’t hold their shape as well.
  • Sausage – Andouille is traditional for Cajun recipes, but you could also use smoked sausage or kielbasa.
  • Less spicy – To make this recipe less spicy, replace the andouille with a more mild smoked sausage and omit the cayenne pepper.
  • Lighter – To make this recipe lighter, use a smoked turkey or chicken sausage.  You could also reduce the amount of butter, but it does add a lot of flavor to the dish.
  • Add more veggies – If desired, feel free to add some fresh onion, carrots, or celery.

How to store leftovers

Once cooled, store leftovers in an air-tight container in the fridge for up to 4 days.

This can be frozen and enjoyed within 2-3 months, however, the texture of the potatoes may change after defrosting.

  • There is no need to brown the sausage in this recipe!  Just slice it and throw it in the slow cooker!

Equipment

  • 6-quart slow cooker or larger

Ingredients
  

  • 1 lb. baby potatoes, quartered
  • 12 oz fresh green beans cut in half
  • 1 lb. Andouille sausage cut into bite-size chunks
  • 1/2 cup unsalted butter (1 stick)
  • 3/4 tsp smoked paprika
  • 1/2 tsp dried thyme rolled between your hands
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne pepper omit if you don't like spicy
  • 1/2 tsp sea salt
  • black pepper to taste

Instructions
 

  • Add the potatoes and green beans to your slow cooker, then top them with the sausage and butter. (This order ensures the butter & sausage juices drip down over the veggies)
  • Sprinkle all of the spices over everything in the slow cooker and cook on low for 4 hours. Give everything a stir to make sure the delicious Cajun butter coats everything and serve warm. I like to drizzle some of the sauce at the bottom of the slow cooker over each plate of food when served. Enjoy!

Notes

  • You can also use full-size potatoes, but make sure you chop them into bite-size pieces.
  • Feel free to use smoked sausage, kielbasa, or turkey/chicken sausage if want a more mild sausage or you can't find andouille.
  • No need to brown the sausage, just cut it and toss it in!
