Mediterranean Hummus Veggie Wraps
Mediterranean Hummus Veggie Wraps make the perfect light, veggie-filled lunch that’s all folded into a delectable wrap or tortilla! Naturally vegetarian, these wraps can easily be made vegan.

While not completely a vegetarian, I have drastically cut down on the amount of meat that I’ve been eating lately. I’ve been eating a lot more salads, soups, and veggies than ever before!
I found myself getting in a rut at lunchtime, and that’s when I created these Mediterranean Hummus Veggie Wraps.
These wraps are so satisfying because they’re fresh, healthy, and check all the texture boxes with crunchy veggies and creamy hummus. Especially great in the hot summer!
Plus, I don’t get tired of them because I can change up the toppings whenever I want!
The great thing about Mediterranean Wraps is that you can totally make them your own.
Choose your favorite wrap, hummus, veggies, etc., and make them exactly how you want them. I’ve listed what I used to make them, but feel free to swap things out for your favorites.
Ingredient needed to make this recipe (scroll down to recipe card for complete recipe):
- Wrap, tortilla, or lavash bread
- Hummus
- Fresh & pickled vegetables
- Cheese (optional)
What do you need to make these wraps?
The vehicle for the wrap could be a spinach wrap like I used, or it could be a burrito-sized flour tortilla, lavash bread, or any kind of thin, foldable flatbread.
Hummus. It’s not only the binder for the wrap, but the chickpeas in hummus are a healthy source of protein and fiber.
My favorite homemade hummus is this Spicy Chipotle Hummus, but you could use store-bought to save time.
Lastly, you need veggies. I like to combine a variety of the following:
- Greens (spinach, arugula, or romaine)
- Cucumber
- Red onion
- Pickled veggie (Middle Eastern Pickled Turnips, jarred pepperoncini, pickled jalapeno, or Pickled Hot Banana Peppers & Onions)
- Tomato
- Sweet mini peppers
- Roasted beets
- Green, black or Kalamata olives
These Middle Eastern Pickled Turnips, (shown below) are absolutely perfect in these wraps!
They’re crunchy, tangy, vinegary, and add a delightful flavor to the wrap.
To leave it vegan, stop at the veggies, but I like to add feta cheese to my wraps. I like the creamy/salty flavor that feta cheese brings to the table.
Instead of feta cheese, you could also use crumbled goat cheese, or your favorite shredded cheese.

Mediterranean Hummus Veggie Wraps
Ingredients
- 1 wrap/tortilla/lavash/flatbread
- hummus
- greens spinach, arugula, or romaine
- sliced veggies red onion, cucumber, tomato, pickled veggies, olives, sweet mini peppers, roasted beets, red cabbage, etc.
- feta cheese optional
Instructions
- I like to pop my wrap in the microwave for about 10 seconds to soften it and make it more pliable so it doesn't tear when folding it into a wrap.
- Spread hummus on wrap, top with greens, veggies, and feta cheese (optional). Fold into a wrap and enjoy!
