Equipment

  • Glass or ceramic non-reactive dish to marinate the meat in
  • Blender or food processor

Ingredients
  

  • 1 1/2 pounds skirt steak or flank steak
  • 2 limes
  • 1/4 cup olive oil
  • 2 garlic cloves
  • 2 teaspoons cumin
  • 1 1/2 teaspoon sea salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon smoked paprika
  • Couple grinds of black pepper
  • 1/3 cup cilantro

Instructions
 

  • Place steak in a glass dish. (I use a rectangular 11 x 15 baking dish).
  • To make the marinade, add the rest of the ingredients to a blender. Blend until the consistency is smooth and there are no chunks of garlic.
  • Pour the marinade over the meat. Flip it over and nestle it in the marinade, making sure both sides are well coated. Marinate for 3-4 hours in the refrigerator.
  • When ready, grill meat to your desired doneness. Let it rest for several minutes, then cut across the grain and serve in your favorite Mexican meals. Perfect for nachos, tacos, burritos, and burrito bowls! Enjoy!

Notes

  • Store leftover steak in an air-tight container in the fridge for up to 3-4 days.
