Eat the rainbow with these Slow Cooker Chicken Fajita Tacos! Made with seasoned chicken and fresh produce like tomatoes, multi-colored bell peppers, onion, and jalapeno, this flavorful fajita mixture makes taco night a cinch!
2bell peppers (red, yellow, green or orange)sliced into strips
1yellow onionsliced into half moons
1jalapenosliced into rings
1/2cupchopped fresh tomato
1/2cupsalsa
Tortillas
Optional toppings: avocado or guacamole, salsa, sour cream, hot sauce, pickled jalapeno slices, shredded cheese, chopped cilantro.
Instructions
Add chicken to slow cooker and sprinkle all the seasonings (chili powder, cumin, smoked paprika, coriander, garlic powder, salt & pepper) on top of chicken.
For SOFT veggies: Add the rest of the ingredients on top of the chicken (bell peppers, onion, jalapeno, tomato, salsa) and cook on low for 4 hours. For FIRM veggies: Cook for 2 hours on low, then add the rest of the ingredients (bell peppers, onion, jalapeno, tomato, salsa) and continue cooking for 2 more hours.
Shred the chicken and stir to combine everything. Add the fajita chicken & veggies to a warm tortilla and add your favorite toppings. Enjoy!
