Equipment

  • 4 or 5-quart slow cooker
  • whisk

Ingredients

  • 6 cups apple cider (48 ounces)
  • 1/4 cup caramel topping (I use Smucker's)
  • 1 teaspoon vanilla extract
  • 3 cinnamon sticks
  • 3 cloves
  • 1/8 teaspoon ground nutmeg
  • 1 apple sliced or chopped
  • 3/4 cup spiced rum

Instructions

  • Add the apple cider, caramel, and vanilla extract to the slow cooker. Use a whisk to incorporate the caramel until it has mostly dissolved. Add the spices (cinnamon sticks, cloves, ground nutmeg), and give everything a stir. For softer apple, add it now, for more crisp apple, add it later. Cook on high for 1 1/2 hours.
  • After 1 1/2 hours, turn the slow cooker to "warm". Add the spiced rum and apple (if you didn't earlier). Give everything a stir and it's done. Great served with apple slices. Enjoy!

Notes

  • Although seven cups of liquid go into the slow cooker, through evaporation and apple absorption, this recipe makes (6) 8-ounce servings.
  • If you double this recipe, make sure to allow extra time for everything to heat through.
  • If you have any leftovers, you can store them in an air-tight container in the fridge for up to 4 days.  Because apple cider is usually unfiltered, you may have apple sediment at the bottom and need to stir it when serving.
  • This is delicious cold too!
