Lemony Greek Chickpeas – Garlicky, lemony, and full of bright, fresh, Greek flavors, these Trader Joe’s copycat chickpeas make an easy, healthy side dish in only 10 minutes!
In a small sauce pan or skillet, sauté the garlic in olive oil for 1-2 minutes, stirring often. Then add the cumin and sauté for another minute to bring out the flavors of the cumin.
Add the drained can of chickpeas to the garlic along with the red pepper flakes, lemon juice, salt & pepper. Sauté for a couple minutes to let the flavors come together, taste for needed salt & pepper, then toss in the parsley. Sprinkle the sumac over the beans when serving. Enjoy!
Notes
The bright flavor of fresh parsley is a big component of this dish. I wouldn't substitute it with dried parsley. You could use fresh cilantro, but the dish wouldn't taste "Greek".
Store leftover chickpeas in an air-tight container in the fridge and use within 4 days.
