Lemony Greek Chickpeas – Garlicky, lemony, and full of bright, fresh, Greek flavors, these Trader Joe’s copycat chickpeas make an easy, healthy side dish in only 10 minutes!

Equipment

  • small sauce pan or skillet

Ingredients
  

  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 (15 ounce) can of chickpeas drained
  • 1/4 teaspoon cumin
  • 1 ounce fresh lemon juice (approx. 1 lemon)
  • pinch crushed red pepper flakes optional
  • 2 tablespoons chopped fresh parsley
  • sprinkle sumac
  • salt & pepper to taste

Instructions
 

  • In a small sauce pan or skillet, sauté the garlic in olive oil for 1-2 minutes, stirring often. Then add the cumin and sauté for another minute to bring out the flavors of the cumin.
  • Add the drained can of chickpeas to the garlic along with the red pepper flakes, lemon juice, salt & pepper. Sauté for a couple minutes to let the flavors come together, taste for needed salt & pepper, then toss in the parsley. Sprinkle the sumac over the beans when serving. Enjoy!

Notes

  • The bright flavor of fresh parsley is a big component of this dish.  I wouldn't substitute it with dried parsley.  You could use fresh cilantro, but the dish wouldn't taste "Greek". 
  • Store leftover chickpeas in an air-tight container in the fridge and use within 4 days.
