Habanero Garlic Rice combines sautéed onion, garlic, and habanero with butter and seasonings for a flavorful side dish that's perfect anytime you want to bring a little heat!
Add oil and rice to a small sauce pan. Sauté on medium to medium-high heat for 3-5 minutes, stirring often so the rice doesn't burn.
Once the rice starts to turn golden, add the onion, garlic, and habanero and give it a stir then sauté for a minute. Then add the butter, coriander, salt, several grinds of black pepper, and the broth. Stir to make sure everything is combined then turn the heat to high and bring to a boil. Once boiling, reduce the heat to a simmer, put the lid on the pan and let cook for 18 minutes.
After 18 minutes, turn off the heat, but leave the lid on. Let it sit for 5 minutes, then fluff with a fork. Diving in with a serving spoon will mush the rice. If you fluff it with a fork first, it will be loose.
Feel free to garnish with fresh cilantro. Enjoy!
