Habanero Garlic Rice combines sautéed onion, garlic, and habanero with butter and seasonings for a flavorful side dish that's perfect anytime you want to bring a little heat!

Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup long grain white rice
  • 1/2 medium yellow onion diced
  • 2 garlic cloves minced
  • 1/2 tablespoon minced habanero
  • 2 tablespoon unsalted butter
  • 1/4 teaspoon ground coriander
  • 1/2 teaspoon sea salt
  • black pepper to taste
  • 2 cups vegetable broth or chicken broth
  • chopped cilantro optional garnish

Instructions
 

  • Add oil and rice to a small sauce pan. Sauté on medium to medium-high heat for 3-5 minutes, stirring often so the rice doesn't burn.
  • Once the rice starts to turn golden, add the onion, garlic, and habanero and give it a stir then sauté for a minute. Then add the butter, coriander, salt, several grinds of black pepper, and the broth. Stir to make sure everything is combined then turn the heat to high and bring to a boil. Once boiling, reduce the heat to a simmer, put the lid on the pan and let cook for 18 minutes.
  • After 18 minutes, turn off the heat, but leave the lid on. Let it sit for 5 minutes, then fluff with a fork. Diving in with a serving spoon will mush the rice. If you fluff it with a fork first, it will be loose.
  • Feel free to garnish with fresh cilantro. Enjoy!

Notes

  • Store leftovers in an air-tight container in the fridge for up to 4 days.
