Ingredients
  

  • 6-8 large carrots cut in half, then cut each in half lengthwise
  • 2 tablespoons olive oil
  • 1/2 tablespoon curry powder
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper optional
  • salt & pepper to taste

Instructions
 

  • Preheat oven to 400°. Either grease a baking sheet or line a baking sheet with parchment paper or foil.
  • In a small bowl, add olive oil with all the seasonings and mix well. Add carrots to a large bowl and pour the seasoned oil over them and mix until carrots are well-seasoned. Add the carrots to your prepared baking sheet and bake for 15 minutes or until tender. Enjoy!

Notes

  • Store leftover carrots in an air-tight container in the refrigerator for up to 3-4 days.
