Add the sour cream, mayo, chipotle pepper (start with 1 and add another if you want it more spicy), adobo sauce, lime juice, honey, smoked paprika, chili powder, garlic powder, onion powder, cumin, and salt to a small mixing bowl. Whisk everything together until fully combined, then refrigerate for at least 20 minutes for the flavors to develop.
As a dipping sauce, it's ready. To make it thinner and pourable for a salad dressing or drizzling on tacos or nachos, add a tablespoon of water or milk. Give it a stir. You can incrementally add a little liquid if desired, but add small amounts. Enjoy!
Notes
Alternatively, you can add the ingredients to a personal-size blender instead of whisking in a bowl.
Store leftover sauce in an air-tight container in the fridge and use within 4 days.
Because it is dairy-based, freezing is not recommended.
Agave or maple syrup can be used in place of honey, but their sweetness' vary. Agave is a little sweeter than honey and maple syrup is a little less sweet than honey.
Plain Greek yogurt can be used instead of sour cream, but the sauce may taste tangier and a little lighter in richness.
