Ingredients
  

  • 6 hard boiled eggs (see directions in post for perfect hard-boiled eggs)
  • 1/2 cup mayo
  • 1 tablespoon Dijon mustard
  • 1 1/2-2 tablespoons sliced scallions
  • 1/8 teaspoon cayenne pepper add more to make it more spicy
  • 1/8 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 pinch white pepper
  • 1/4 teaspoon dried thyme rubbed between your hands
  • salt & black pepper to taste
  • Optional additions Louisiana-style hot sauce, relish, pickles, celery, onion

Instructions
 

  • Chop and mash hard boiled eggs to your desired consistency. Add all the other ingredients and mix until combined. Make it extra flavorful by adding your favorite additions: hot sauce, celery, onion, pickles, or relish. Enjoy!

Notes

  • This recipe has just a hint of heat from the cayenne pepper.  To make it more mild, omit the cayenne pepper.  To make it spicier, add more cayenne pepper or some hot sauce to taste.

  • This egg salad will last 3-4 days in an air-tight container in the refrigerator.
