Toasted Za’atar Pita Chips
Toasted Za’atar Pita Chips are tasty triangles of za’atar seasoned pita bread toasted to crispy perfection. They’re a perfect companion to hummus, mezze platters, or served alongside your Mediterranean meal!

Something I love to do is transform something I have sitting around the kitchen into a delicious, better version of itself. Just like these Toasted Za’atar Pita Chips.
I had some leftover pita bread in the fridge, so I decided to give them their best life – as a wonderfully crispy pita chip flavored with the earthy, Middle Eastern spice blend, za’atar.

- Pita bread – whole wheat or white, both are great
- Olive oil
- Za’atar
- Salt
What is Za’atar?
It’s a Middle Eastern spice blend made with sumac (a bright, lemony spice), sesame seeds, and dried herbs (thyme, hyssop, oregano, or marjoram are common herbs in za’atar).
Each brand of za’atar seems to vary slightly – sometimes they contain only one herb, and sometimes they have three or four!
What to serve with these pita chips?
How else can you use Za’atar?
It’s great sprinkled on top of hummus or added to your marinades for Middle Eastern or Mediterranean meats.

Every time I make Toasted Za’atar Pita Chips, they just disappear.
My eldest swipes them off the plate and munches on them by themselves. However, my youngest, my husband, and I all love dipping them in hummus.
These pita chips would also be fabulous on a mezze platter with olives, dried apricots, feta cheese, Middle Eastern Pickled Turnips, nuts, sliced cucumbers, and roasted red peppers. Yum!
NOTES:
- The longer the pita chips sit out, the crispier they get. Right when they come out of the oven, they will be crispy with a little chewiness to them, which is the best! However, if you want them really crunchy, just let them sit out for a while or bake them for another minute or two, making sure they don’t burn.
- I use a silicone pastry brush (shown above) to distribute the olive oil evenly over the surface of the pita bread. If you don’t have one, try using your fingers to spread it around, making sure to get the entire top of the pita bread.
Toasted Za'atar Pita Chips
Equipment
- baking sheet
Ingredients
- 2 pita breads
- 1 tsp. olive oil divided
- 1 tsp. za'atar divided
- sea salt to taste
Instructions
- Preheat oven to 375°. Place pita bread on a baking sheet and pour 1/2 tsp. olive oil on each pita bread. Using a pastry brush, spread the olive oil all over the pita bread, making sure the entire top of the pita bread has olive oil on it (it's the glue for the seasoning).
- Sprinkle 1/2 tsp. of za'atar on each pita bread, then sprinkle your desired amount of sea salt too. Bake the pita breads for 8-10 minutes, depending on how crispy you want them to be. For my oven, I like to bake mine for 9 minutes.
- Take your pita breads out of the oven and using a knife or a pizza cutter, slice the pita bread down the middle, cutting them into 2 pieces, then across, cutting them into 4 pieces, then diagonally through each quarter, to give you 8 triangular pita chips. They will get crispier after they sit out for a little bit. Enjoy!
