This Za’atar Chicken & Chickpeas is a dinner that’s been on repeat a lot in our house!
Thanks to being a one-pan recipe that has both the main course and the side dish, all you need are your favorite toppings & what you want to serve it on.
We love serving this on flatbread with hummus, pickled veggies, tzatziki, lettuce, and sliced cucumber, but it’s also great on a salad or rice bowl.
Ingredients needed for this recipe (scroll down to recipe card for complete recipe):
- Chickpeas – I like canned chickpeas best for this recipe
- Chicken breasts – chicken thighs could also be used
- Olive oil
- Lemon
- Spices – za’atar, paprika, garlic powder, cumin, salt & pepper
- Toppings – cucumber, hummus, tzatziki, red onion, feta cheese, etc.
- Naan, flatbread, pita, salad, or rice
What is za’atar?
Za’atar is a Middle Eastern spice blend made with sumac (a bright, lemony spice), dried herbs (thyme, hyssop, oregano, or marjoram are common herbs in za’atar), and sesame seeds.
It adds a warm, earthy, and slightly nutty flavor.
I love za’atar so much, I use it in Crispy Za’atar Roasted Potatoes and on these pita chips!
How to make Za’atar Chicken & Chickpeas
- Marinate chicken according to recipe card below.
- Toss chickpeas in a bowl with olive oil and spices.
- Line a large sheet pan with parchment paper.
- Roast marinated chicken and seasoned chickpeas on the sheet pan according to recipe below.
- When done, add the chicken and chickpeas to naan, flatbread, salad, or to a rice bowl with your favorite toppings.

Sheet Pan Za’atar Chicken & Chickpeas can be served many ways:

💡 Tips & Tricks
Here are a few tips to make sure your sheet pan meal turns out perfectly:
Naan/Flatbread/Pita: These breads are tastiest and have the best texture when warm and/or toasted.
Chickpeas: These chickpeas are not designed to be crunchy. If you prefer them crunchy, remove the chicken when done and continue roasting chickpeas.
Chicken: The recipe calls for chicken breasts, but feel free to use boneless, skinless chicken thighs if that’s what you prefer.
Meal Prepping: This recipe is perfect for meal prepping! Divvy up the chicken and chickpeas amongst containers for easy meal prep.
How to store leftovers
Once cooled, store leftover chicken and chickpeas in an air-tight container in the fridge for up to 4 days.

Equipment
- 15.25" x 10.25" sheet pan
- Mixing bowl
Ingredients
Chicken Marinade
- 2 lbs boneless, skinless chicken breasts cubed
- 2 tablespoons olive oil
- 1.5 tablespoons za'atar
- 1/2 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- salt & pepper to taste
- 1 lemon the juice of
Seasoned Chickpeas
- 15 ounce can of chickpeas drained, rinsed & patted dry
- 2 teaspoons olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- salt & pepper to taste
Instructions
- Marinate chicken in non-reactive mixing bowl with the chicken marinade ingredients. Cover, refrigerate, and marinate for 1-5 hours.
- Preheat oven to 350°
- Toss the chickpeas in a mixing bowl with the olive oil and spices, then add them to half of a large, parchment paper-lined sheet pan. Add the marinated chicken to the other half of the sheet pan. Roast for 30 minutes.
- * The chickpeas will be tender. For crunchy chickpeas, remove chicken when done and continue cooking chickpeas until you've reached your ideal texture.
- Use the za'atar chicken & chickpeas however you desire: flatbread, pita pockets, naan bread, salad, or rice bowls with your favorite toppings. Enjoy!
