Whether you’re growing tomatoes in your vegetable garden or picking some up at your local farmers’ market, juicy, ripe, summer tomatoes are at their peak!  I have put together 8 Recipes Using Fresh Tomatoes to help you take advantage of this seasonal gift!

I have grown many kinds of tomatoes over the years, but this year, I’m growing Roma tomatoes, small slicing tomatoes, and some mini cherry tomatoes. 

I use my tomatoes in scrambled eggs, guacamole, salsa, on sandwiches, roasted on sheet pan dinners, on burgers, in sauces, the list goes on.  We’re cooking a lot with tomatoes these days! 

What else can I make with fresh tomatoes?

A lot of people are looking for ways to use up tomatoes this time of year, and too often the answer is: pasta sauce. 

As great as pasta sauce is, I’m here to bring you other alternatives. 

So if you’re like me and have tomatoes coming out of your ears, here are 8 Recipes Using Fresh Tomatoes to help you use up those beauties!

1. Middle Eastern Salad Shirazi – This flavorful, chopped salad made with cucumbers, tomatoes, red onion, lemon juice, and parsley is the epitome of fresh, summer produce! 

If you’re growing cucumbers, it’s a win-win!  This is great served with kabobs or grilled chicken, and I always include it in my Middle Eastern Bowls with rice, hummus, feta cheese, and pita bread.  So good!

2. Garlicky Shrimp in Jalapeno Butter – This one-pan wonder is made with fresh tomatoes, shrimp, jalapenos, garlic, and butter. 

Excellent in tacos, over rice, on mashed potatoes, or with a crusty loaf of bread to mop up the delicious sauce.

3. BEST-EVER Fried Tomatoes with Panko & Manchego CheeseThis Spanish tapas recipe takes fried tomatoes to a new level!  Just look at the crispy panko/manchego cheese coating on the red, ripe tomatoes!
