The Ultimate Corned Beef Bagel Sandwich
The Ultimate Corned Beef Bagel Sandwich – Sautéed onions, pan-fried corned beef slices, melted cheese, and garlicky dill pickles all layered between a toasted Everything bagel with a creamy mustard spread. Leftover corned beef never tasted so good!

There is a glorious sandwich that I’ve been making for years – The Saint Paddy Corned Beef Melt.
It was created out of a need to use up leftover corned beef in a not-corned-beef-and-potatoes kind of way.
It’s made grilled cheese-style with rye bread. While that sandwich is exceptional and truly a masterpiece, I made it a sister, The Ultimate Corned Beef Bagel Sandwich.
Now close your eyes and picture this: a toasted Everything bagel that’s chewy and slightly crispy, with a light spread of mayo & Dijon for both a creamy and sharp component.
There are some tangy, crisp, dill pickle chips that add a wonderful zing.
Then we have some pan-fried pieces of corned beef that are topped with melted cheese and sautéed onions, which bring a tad bit of sweetness to the party.

- Bagel
- Leftover corned beef
- Sliced cheese
- Butter
- Onion
- Pickles
- Dijon mustard
- Mayo
This Corned Beef Sandwich is, might I say, a perfect sandwich. There, I said it. I’m tooting my own horn.
This sandwich is EPIC! Everything in this sandwich complements each other and the textures are just spot-on. I can’t wait for you to try it!
Making your own homemade Garlic Dill Pickles (shown below) for this sandwich is a cinch!
Just let them sit in the fridge for a day or two before eating them so the flavors develop.

How to serve this bagel sandwich:
These corned beef sandwiches are great for either lunch or dinner.
I like to serve them with a side salad or potato salad, and of course, some habanero garlic pickles.
NOTES:
- I like Dijon mustard in this recipe, but feel free to replace it with yellow mustard if that’s your thing.
- No specific amount of corned beef is listed in the ingredients because I feel “to each their own”. If you want a couple pieces, slice a couple pieces. If you want a mountain of corned beef piled high on your bagel, you do you. I won’t judge.

The Ultimate Corned Beef Bagel Sandwich
Ingredients
- 1 bagel Everything bagel is my favorite for this
- leftover corned beef sliced
- 1 or 2 slices of cheese
- 1/2 tbsp. butter
- sliced yellow onion as much as you desire
- 4 or 5 pickle chips
- mayo
- Dijon mustard
Instructions
- Sear your sliced corned beef in a hot skillet to kind of crisp up the exterior - it adds a fantastic flavor and texture! Scoot that to one side of the skillet and sauté the onion on the other side of the pan. When the onion has softened, top the corned beef with your favorite sliced cheese. I love pepper jack! Let the cheese melt by covering your skillet with a lid or by placing a baking sheet over it until the cheese is all deliciously melty.
- Next, toast your bagel, then spread a little mayo and Dijon mustard on both sides of the bagel. Place pickle slices on the bottom half of the bagel. Take a large spatula and carefully lift the cheesy corned beef out of the pan on onto your bagel bottom. Top the corned beef with the sautéed onions. Cut the sandwich in half or eat whole. Enjoy!
