Spicy Kimchi Garlic Noodles
Fresh noodles stir-fried with lots of garlic, chili oil, tangy kimchi, sliced scallions and a delectable soy/sesame sauce are combined to make Spicy Kimchi Garlic Noodles. A perfect side dish as-is, or add vegetables and your favorite protein for a complete meal.

My love for kimchi has inspired me to make kimchi fried rice (one of the best bites of food I’ve ever had), savory kimchi pancakes, and Spicy Korean Deviled Eggs.
The noodle lover that I am wanted to make some spicy noodles with it too, so today I bring you: Spicy Kimchi Garlic Noodles.
I don’t know if it’s because I’m a snacky kind of girl, or I just have an insatiable appetite for pickled and fermented foods, but the assortment of banchan (small shareable dishes) you get at the beginning of your Korean meal are probably my favorite part of the whole dinner!
Kimchi, in all of its wonderful forms, is by far my favorite of all the banchan.
In the way that I put hot sauce on every bite of my burrito or spread butter on every inch of my bread, I also need kimchi in just about every forkful of my Korean food. It’s a tangy, crunchy, spicy goodness that really complements each bite.
What is kimchi?
It’s a fermented vegetable that is combined with chili peppers, salt, and other spices. The naturally occurring bacteria on the fresh vegetables is what starts the fermentation process and turns it into the delightful snack that it is.
While napa cabbage is probably the most popular type of kimchi, I have also eaten kinds that were made with radishes, cucumbers, and other veggies.
How to make Spicy Kimchi Garlic Noodles
- In a wok or a large skillet sauté garlic in the chili oil until nice and fragrant, then add in the fresh yakisoba noodles.
- Loosen up the noodles and wok them for a little bit, then pour in your soy/sesame sauce and kimchi. Heat through and then sprinkle in some toasted sesame seeds and sliced scallions.
Warning: these noodles are addicting!
Not only do the 10, yes 10, cloves of garlic make them irresistible, the crunchy pieces of spicy kimchi throughout and the fabulous Asian-style sauce made with sriracha, hoisin, soy sauce, and sesame oil is what makes this a spicy, garlicky, delightful bowl of happiness.

NOTES:
- If you can’t find chili oil in the grocery store, you can order it here from Amazon.
- These noodles serve 2-3 as an entrée or 4-6 as a side dish.
- Use the salt sparingly in the sauce because both hoisin and soy sauce are very salty.
Spicy Kimchi Garlic Noodles
Equipment
- Wok
Ingredients
- 3 tbsp soy sauce
- 1 tbsp hoisin
- 2 tsp sriracha
- 1/4-1/2 tsp. sugar add more to suit your taste
- 1 1/2 tbsp toasted sesame oil
- several grinds of black pepper
- pinch of salt
- 2-3 tbsp. chili oil
- 10 cloves of garlic minced
- 2 7oz packages of fresh yakisoba stir fry noodles, discard seasoning packet
- 1 1/2 packed cups kimchi roughly chopped
- toasted sesame seeds
- 1/2 cup sliced scallions
Instructions
- In a small bowl, whisk together the soy sauce, hoisin, sriracha, sugar, sesame oil, pepper, and salt. Set aside.
- In a wok or large skillet, add chili oil and garlic. Sauté on medium/medium-high for about 2 minutes, stirring constantly so the garlic doesn't burn. Add the yakisoba noodles, using a utensil to loosen them up so they're no longer stuck together. Sauté the noodles for 2-3 minutes, then add the sauce and kimchi. Sauté for about 2-3 minutes or until everything is heated through. Mix in sesame seeds and scallions and serve immediately. Garnish with more sesame seeds and scallions sprinkled on top. Enjoy!
