Slow Cooker Creamy Chicken Gnocchi Soup

This rich & creamy soup starts out with chicken, garlic, onions, and broth that cook in the slow cooker.
When the chicken is done, we add fresh kale, gnocchi, pesto, and cream to cook for a little longer.
Garnish your soup with some parmesan cheese and pair it with some crusty bread for ultimate cold weather treat!

- Chicken breasts
- Onion
- Garlic
- Broth
- Fresh kale
- Gnocchi
- Heavy cream
- Pesto
- Seasonings – dried thyme, dried oregano, salt, pepper, bay leaf
How to make this recipe

- Add the chicken, onion, garlic, and seasonings to the slow cooker.
- Pour broth over the chicken and cook for 4-5 hours.
- Remove bay leaf and shred chicken.
- Add the kale, gnocchi, cream, and pesto. Cook for 30-40 minutes or until the gnocchi are tender.
How to serve Slow Cooker Creamy Chicken Gnocchi Soup
I like to serve this creamy soup with either a baguette, garlic bread, or a loaf of crusty French bread for dipping.
Excellent garnishes for this soup:
- Grated or shredded parmesan cheese
- Red pepper flakes if you like a little heat
- A little chopped parsley for freshness
How to store leftovers?
Once the soup has cooled, refrigerate it in an air-tight container and use within 3-4 days.
Because of the dairy in this soup, the texture may change, and the soup may separate if you freeze it.
Can I replace the kale?
I prefer kale because of its hearty texture in recipes, however, you can substitute the kale with fresh spinach if desired.

Equipment
- 5 qt. slow cooker (or larger)
Ingredients
- 1.5-2 lb boneless, skinless chicken breasts
- 1/2 medium yellow onion diced
- 4 garlic cloves minced
- 1 bay leaf
- 3/4 tsp dried oregano
- 1/2 tsp dried thyme rolled between your hands
- salt & pepper to taste
- 6 cups chicken broth
- 16 oz gnocchi
- 4-5 cups chopped kale
- 3/4 cup heavy cream
- 1.5 tbsp prepared pesto
- parmesan cheese optional garnish
- chopped fresh parsley optional garnish
- red pepper flakes optional garnish
Instructions
- Add the chicken, onion, garlic, bay leaf, dried oregano, dried thyme, salt, and pepper to the slow cooker. Pour broth over the chicken and cook on low for 4-5 hours or until the chicken is fully cooked.
- Remove the bay leaf and shred the chicken. Add the kale, gnocchi, heavy cream, and pesto to the slow cooker. Stir to combine. Cook for 30-40 minutes or until the gnocchi are tender.
- Excellent served with some parmesan cheese on top and a side of crusty bread! Enjoy!
