Slow Cooker Balsamic Beef

Slow Cooker Balsamic Beef is nothing short of fabulous comfort food. What’s better than a plate of mashed potatoes topped with chunks of fork-tender beef with aromatic garlic and onions simmering in a rich, beefy, balsamic sauce?
The fact that your slow cooker did all the work! Besides browning the meat, there is nothing to do but dump all the ingredients in a slow cooker.
Some backstory about me: typical American comfort foods like biscuits & gravy, chicken noodle soup, pot pies, and things like that were not common in my house growing up.
My mom was born in Liverpool, England, so her idea of comfort food was something like Chicken Curry or Cottage Pie.

- Beef roast
- Onion
- Garlic
- Beef broth
- Balsamic vinegar
- Bay leaf
- Dried thyme
- Salt, pepper
Pot roast is kind of a treat for me because even though I love it, I don’t make it very often.
I decided I wanted to detour from a traditional pot roast and make a beef roast with balsamic vinegar to give the sauce a slightly tangy, salty, richness.
The rich balsamic vinegar combined with thyme, beef broth, onions, and garlic is a delectable combination that is just screaming for something to soak up all the gravy!

How long is cooked beef good for?
Store leftovers in an air-tight container in the fridge for up to 3-4 days.

- I have made this with a chuck roast, bottom round roast, and top round roast. Bottom and top round roasts are lean, which makes them more dry and not as flavorful as a chuck roast. Chuck roasts are very fatty, but extra flavorful. Choose the roast that works best for you.

Slow Cooker Balsamic Beef
Equipment
- 5-6 qt slow cooker
Ingredients
- 2 lb. beef roast, cut into chunks See the "notes" in post regarding different roast types.
- 1 yellow onion sliced
- 4 garlic cloves minced
- 1 14.5 oz can beef broth
- 3 tbsp balsamic vinegar
- 1-2 bay leaves
- 1 tsp. dried thyme
- salt & black pepper to taste
Instructions
- Brown all sides of the meat in a hot pan, then add it to a slow cooker. Top meat with onion, garlic, balsamic vinegar, bay leaf, thyme, and salt & pepper. Pour beef broth over everything and cook on high for 4 hours or low for 7-8 hours or until tender. Serve over mashed potatoes or your favorite starchy side. Enjoy!
