Goat Cheese Crostini with Balsamic Grape Tomatoes

Goat Cheese Crostini with Balsamic Grape Tomatoes is without a doubt, one of my new favorite recipes!
These crostini make absolutely wonderful appetizers, but honestly, they’re a fantastic light, vegetarian lunch too.
The cooked balsamic tomatoes will transform into little parcels of garlicky goodness that when combined with the tangy goat cheese and French bread or sliced baguette, just creates a perfect, blissful bite.
The addition of balsamic vinegar adds a wonderful depth of flavor to complement the sweet, garlicky tomatoes.
Ingredients needed for this recipe (scroll down to recipe card for complete recipe):
- Grape tomatoes
- Garlic
- Olive oil
- Balsamic vinegar
- Salt & pepper
- Goat cheese
- French bread or baguette
How to make these Goat Cheese Crostini:
- To make this recipe, you’ll sauté a pint of grape tomatoes in olive oil until they start to pop open and soften.
2. At that point, add your garlic and balsamic vinegar and continue cooking until the garlic is soft and the tomatoes are nice and broken down.
3. For crispy crostini, toast French baguette slices under the broiler for a minute or two, or until they start to turn golden. Alternatively, you can use soft, untoasted slices of French bread.
4. Spread your desired amount of goat cheese on the French bread and top with the balsamic tomatoes. The garlicky juices in the pan are heavenly, use those too!
What kind of bread should you use to make this appetizer?
When deciding on the vehicle for these crostini, consider how big you want the end result to be.
A French baguette will make cute little bite-size pieces, where a loaf of French bread is going to give you larger, more hefty slices.
To toast or not to toast the bread?
I personally think these bite-sized nibbles are equally great on both toasted and untoasted bread.
The stars of the show are truly the tomatoes and goat cheese, so decide if you want them on soft or crunchy bread.
Can I use a different type of tomato?
Cherry tomatoes may be substituted for grape tomatoes, but they do contain more water and have thinner skins, so keep that in mind.

NOTES:
- I have my crostini loaded to the max with tomatoes in the pictures because it looks so pretty, but you can definitely dial it down with as much tomato mixture as you want.
- While there are flavored goat cheeses out there, you really want plain goat cheese for this recipe as you don’t want the flavored goat cheese to compete with the flavor of the balsamic garlic tomatoes.

Goat Cheese Crostini with Balsamic Grape Tomatoes
Ingredients
- 2 tbsp. olive oil
- 1 pint grape tomatoes
- 2 garlic cloves minced
- 1 tsp. balsamic vinegar
- salt & pepper to taste
- 4-5 oz. plain goat cheese
- sliced bread baguette or French bread
Instructions
- Add olive oil and tomatoes to a skillet and sauté over medium heat for about 20-22 minutes, stirring occasionally. When the tomatoes start to pop and break down, add the garlic and balsamic vinegar. Cook for a couple minutes, until the garlic has softened. Season with salt and pepper to taste.
- If using untoasted bread, spread goat cheese on each crostini and top with some of the balsamic tomato mixture. I like to crack some fresh pepper on top. Enjoy!
- If using toasted bread, add your bread slices to a broiler and broil for a minute or two, watching that it doesn't burn. Spread goat cheese on each crostini and top with some of the balsamic tomato mixture. I like to crack some fresh pepper on top. Enjoy!
