Cheesy Spinach Lasagna Roll Ups are the perfect healthy-ish recipe when you’re wanting a homemade, satisfying meal filled with cheesy goodness!
They’re made with tender lasagna noodles and a delicious filling made of frozen spinach, herbs, garlic, and three kinds of cheese.
These lasagna roll ups are perfect for any occasion! They look fancy enough for company, but they’re easy enough for weeknights!
Just roll them up, cover them in marinara sauce and mozzarella, then bake them to cheesy perfection.

- Lasagna noodles – regular, not the no-boil
- Marinara sauce – homemade or store-bought
- Frozen chopped spinach
- Mozzarella cheese
- Ricotta cheese
- Parmesan cheese
- Garlic
- Seasonings – dried oregano, dried basil, salt & pepper
How to make Spinach Lasagna Roll Ups
- Boil lasagna noodles and set aside. (I drizzle olive oil on them to keep them from sticking)
- Prepare the filling by combining the frozen spinach, ricotta, parmesan, garlic, and seasonings in a mixing bowl.
- Spread some of the mixture on a lasagna noodle, then sprinkle some mozzarella cheese on top.
- Roll up the lasagna noodle and place in a baking dish that has some marinara on the bottom.
- After all the lasagna roll ups are done, pour marinara sauce over them, top with mozzarella, and bake until cheesy.

💡Tips & Tricks
- Spinach: Make sure to thoroughly squeeze all of the water out of the defrosted spinach, so it doesn’t make the rolls watery.
- Ricotta: I prefer the texture of full-fat ricotta cheese, so that’s what I use.
- No egg: I have made lasagna roll ups with and without egg in the cheese mixture and I don’t notice a difference, so I don’t use egg in my recipe.
How to store lasagna roll ups
Lasagna roll ups can be stored in an air-tight container in the refrigerator for up to 4 days.
They may dry out, so additional marinara sauce may be needed when reheated.
The lasagna roll ups can also be frozen in freezer-safe containers for 3 months.

Cheesy Spinach Lasagna Roll Ups
Equipment
- large baking/casserole dish mine is 11"x15"
- stock pot

Ingredients
- 12 lasagna noodles regular, not no-boil
- vegetable oil for pasta water optional
- 10-12 oz frozen chopped spinach defrosted, water squeezed out
- 15 oz ricotta cheese
- 3/4 cup grated parmesan cheese + 2 tablespoons for topping
- 3-4 garlic cloves minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon sea salt
- pepper to taste
- 3 cups shredded mozzarella divided
- 24 oz marinara (3 cups)
Instructions
- Preheat oven to 375°. Cook lasagna noodles in a large stock pot according to package directions. I like to add a little vegetable oil to the boiling water so the noodles don't stick together.
- While the noodles cook, make the filling by adding the squeezed-dry spinach, ricotta, 3/4 cup of parmesan, garlic, oregano, basil, and salt to a mixing bowl and mix until fully combined.
- Transfer cooked noodles to a plate and if desired, drizzle a little oil on them so they don't stick together.
- Add a couple tablespoons of marinara sauce to bottom of your baking dish and spread it out.
- Spread some of the ricotta filling on each lasagna noodle by holding down the side of the noodle and spreading the filling across in an even layer. (There's a photo of this in the post) Sprinkle a little mozzarella over the ricotta filling, then roll it up. *You'll use about 1-1.5 cups of mozzarella for the filling and save the rest for the end. Place each lasagna roll seam-side down in the baking dish.
- Pour the marinara over all the lasagna rolls, then sprinkle the remaining mozzarella, and about 2 tablespoons of parmesan over the rolls. Bake uncovered for 25 minutes, or until the cheese is nice and melty. Enjoy!
