Fajita Burrito Bowls
Skip the takeout and make your own Fajita Burrito Bowls from scratch! These amazing bowls have all your Mexican favorites like homemade salsa, grilled fajita veggies, Mexican rice, black beans, and grilled chicken or carne asada if you wish.

When it comes to food in my house, my husband and I each have our own way of eating our favorite foods.
He always transforms his food into a handheld – a sandwich or a wrap of some sort. My favorite thing to do is make a bowl. Whether it’s Mexican food or my Mediterranean favorites like rice, kubideh, salad shirazi, tzatziki sauce, and hummus, I layer everything in a bowl and call it my “party on a plate”.
The base of the Fajita Burrito Bowl is my The Best Mexican Rice (shown below). It’s easy to make and so delicious with beans, salsa, grilled meat, and fajita veggies piled on top!
I love everything inside this bowl so much, I would be hard-pressed to pick a couple favorites.
The grilled onions and peppers give the bowl a nice crunch and great grilled flavor, and the Mexican rice is the perfect base for all the toppings.
The Smoky Slow Cooker Black Beans (shown below) are smoky and spicy, and they add a great texture.
The salsa is fresh, cold, and spicy. Seriously, all you need is an avocado or some guacamole and maybe a little bit of sour cream.

While I was sitting on the couch admiring my beautiful bowl, I took great pride in realizing that I made EVERYTHING in this bowl from scratch – even the jalapenos came from my garden!
These bowls are delicious, made-from-scratch, and are hits with everyone in my house…even the kids.
Speaking of kids, when I asked my youngest son what he thought of my Fajita Burrito Bowl, he said it was “better than Chipotle.” What!?! As a fan of Chipotle, I couldn’t be happier to hear that!

Fajita Burrito Bowls
Ingredients
- Easy Homemade Salsa recipe link to recipe in post
- Smoky Slow Cooker Mexican Black Beans recipe link to recipe in post
- The Best Mexican Rice recipe link to recipe in post
- if desired the recipe for The Best Carne Asada or Cilantro Lime Grilled Chicken (link to recipe in post)
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 large yellow onion sliced
- drizzle of olive oil
- garlic salt
- black pepper
- Optional toppings: avocado guacamole, sour cream, shredded cheese, tortilla chips, cilantro
Instructions
- Customize your Fajita Burrito Bowl by selecting the recipes from the post. Keep in mind that if you choose to make the beans, need to soak overnight first.
- Add sliced onions and peppers to a medium bowl. Drizzle vegetables with a little bit of olive oil, sprinkle with garlic salt and grind a little black pepper over everything. Toss the veggies to coat well.
- Add veggies to a grill pan and grill on medium-high heat at the same time the chicken/carne asada is on the grill (if using meat). Toss veggies every couple minutes so they don't burn. Alternatively, you can sauté the veggies in a skillet on the stove.
- Prepare the bowls: Add some rice and beans to the bottom of your bowl. Top with meat (if using), some salsa, some of the grilled fajita veggies, and top with your favorite toppings. Enjoy!
