Dijon Chive Vinaigrette
Dijon Chive Vinaigrette is a fresh and bright salad dressing that is made with olive oil, rice vinegar, Dijon mustard, and fresh chives. Not only is it delicious, it only takes 5 minutes to make!

The tangy flavors from the rice vinegar and Dijon mustard really complement the slightly oniony flavor of the fresh chives in this recipe for Dijon Chive Vinaigrette.
All that goodness gets whisked together with some olive oil and salt & pepper for a delicious, homemade salad dressing that only takes five minutes to make!
Vinaigrettes usually have a 2-1 or 3-1 oil to vinegar ratio.
I find a 3-1 ratio to be a little too heavy in olive oil and not enough “tang” from the acid, so I used a 2-1 in this dressing and it’s absolutely perfect.
The end result is light, fresh, and loaded with bright flavors that are screaming for some salad greens. Now skip the condiment aisle of the grocery store and whip up your own Dijon Chive Vinaigrette!

- Olive oil
- Dijon mustard
- Fresh chives
- Rice vinegar
- Seasonings – salt, pepper
I don’t know about you, but I find it so rewarding to make my own sauces and dressings from scratch.
It’s easy to buy a bottle of salad dressing from the store, but I find that they are expensive and often times, contain iffy ingredients.
Making your own dressing ensures that you know exactly what’s in it, and it’s also way more fresh than anything you can get in the store.
I’ve made many homemade sauces and salad dressings, including a blue cheese dressing, an amazing sesame/soy dressing, and Lemon Basil Vinaigrette (shown below), but Dijon Chive Vinaigrette has got to be one of my new favorites!
How long is a homemade vinaigrette good for?
Keep the vinaigrette in an air-tight container and store in the refrigerator for up to a week.

Dijon Chive Vinaigrette
Ingredients
- 1/2 cup olive oil
- 1/4 cup rice vinegar
- 2 tbsp. chopped fresh chives
- 1 tbsp. Dijon mustard
- 1/4 tsp. + pinch sea salt
- Several grinds of fresh black pepper
Instructions
- Add all ingredients to a medium bowl. Use a whisk to combine everything nicely. Alternatively, add all the ingredients to a mason jar and shake vigorously. Refrigerate until needed. Stir/shake before serving. Enjoy!
