Herbed Butter Garlic Rice

Herbed Butter Garlic Rice is an easy, savory side dish made with white rice, garlic, Italian parsley, and butter that comes together in less than 30 minutes.  Perfect for your favorite saucy entrée!

Herbed Butter Garlic Rice

If you know one thing about me, (besides the fact that I’m always talking about food) you know that carbs and I are close friends. 

Yeah, we hang out a lot.  So imagine my sadness when I tell you that 1) my kids are not big fans of carbs in general, and 2) rice is their least favorite of them all!

What’s a girl supposed to do when we’re having something saucy like Chickpea Cauliflower Curry or Slow Cooker Chicken Adobo or anything where you want to pour the amazing sauce over something?

The options are really limited in my house. 

I could serve it over mashed potatoes, but my husband and one of our kids aren’t big fans of potatoes. 

I could serve it over egg noodles, but no one in the house likes egg noodles but me (sad face). 

White rice?  Forget it.

So in an attempt to jazz up plain old white rice, I created this Herbed Butter Garlic Rice

Herbs.  Butter.  Garlic.  Can you hear those flavor bells going off? 

Seriously, what’s not to love about that combination! 

Each bite is filled with garlicky rice that has that a wonderful savory/buttery thing going on and has flecks of Italian parsley throughout.  I could eat a bowl of it all by itself.

Ingredients needed for this recipe (scroll down to recipe card for complete recipe):

  • Long grain white rice
  • Olive oil
  • Garlic
  • Butter
  • Broth (chicken or vegetable)
  • Fresh parsley
  • Salt, pepper

How to Make Herbed Butter Garlic Rice:

  1. First, sauté the rice in a little bit of oil.  This gives the rice a more golden, almost toasted flavor. 
  2. From there, the hard work is done.  Just add the garlic, fresh parsley, butter, broth, and seasonings.  Once it comes to a boil, reduce the heat to simmer, put the lid on and set the timer for 18 minutes.  Side dish done!

How long is cooked rice good for?

Cooked or leftover rice is good up to 3-4 days in the refrigerator in an air-tight container.  

NOTES:

  • I used Italian parsley in this recipe, but feel free to use a different herb or a blend of herbs.
  • I like to make this with chicken broth, but you could easily make this vegetarian by using a flavorful vegetable broth.

Ingredients
  

  • 1 tbsp olive oil
  • 1 cup long grain white rice
  • 2 cups vegetable broth or chicken broth
  • 2 tbsp chopped fresh parsley
  • 3 garlic cloves minced
  • 3 tbsp. butter
  • 1/2-3/4 tsp. salt
  • black pepper to taste

Instructions
 

  • Add oil and rice to a small sauce pan. Sauté on medium heat for 3-5 minutes, stirring often so the rice doesn't burn. Once the rice starts to turn golden, add the garlic, cook for a minute and then add the broth, parsley, butter, salt and pepper. Bring to boil, then reduce the heat to low, put the lid on and simmer for 18 minutes.
  • Feel free to garnish with some fresh parsley. Enjoy!

    Yum! I had accidentally made rice for a meal and it turned out the meal I defrosted was Sloppy Joe. I didn’t want to throw the rice away since I had already added water. I searched for a recipe to make the rice into a side and this came up. I had all the ingredients even parsley and it was a perfect side. Kids ate it.

    Wait! NO ONE has reviewed this?! OMG! We make this rice regularly!!! It is easy and delicious! My toddler even gobbles up 2-3 helpings of this!
